Cashew Truffles
Adopted from: “Health by Chocolate” by Victoria Laine
Makes about two dozen medium sized truffles.
Ingredients:
¾ cup agave nectar
1 cup cashews (or macadamia nuts instead)1 cup raw almonds
½ cup raw cacao powder
1 to 2 tbsp. Cold-pressed coconut oil
¼ tsp (or more). Vanilla extract
optional: ½ cup raw cacao powder to roll truffles into
Directions:
Place almonds into food processor with “S” blade and process until flour-like consistency.
Add the cashews to almond flour meal and repeat process.
Add remaining ingredients and process until well combined.
Form into medium sized balls and roll into cacao powder if desired.
Refrigerate to set and enjoy!
